Milk washing, also known as clarification, is a mixology technique where a cocktail is mixed with milk, causing the milk to curdle and trap impurities. This process clarifies the drink, removing haziness and bitterness, and adds a smooth, silky texture.
In this video, bourbon is mixed with milk in about a 6:1 ratio and a small amount of citric acid is added to ensure the milk curdles. The mixture is refrigerated for about 24 hours to allow the milk curds to trap impurities and separate. The mixture is the prefiltered through a 200 mesh nylon filter and then through a 5 micron filter using vacuum filtration for the final stage.
